Bubbles of gas released from the lake bed were frozen in their place as winter hit this year. The absence of snow in the area left the surface stunningly clear, allowing National Geographic to snap this fantastic image.

Here is the picture of the Urban Swing Lunch Kit I just referenced in my last post.
This is a topic I’ve struggled with for quite a while. I always end up with some sort of lunch (on the days I actually manage to get my act together and not just run out for lunch) in a plastic Target bag or something. Or the dreaded frozen meal, which you’re lucky if they taste like more than cardboard and you can handle the fact that you’ve probably just consumed your entirely daily value of sodium in one little meal that doesn’t even satisfy your hunger for long.
I haven’t been cooking or making my own food much lately because I’m in between living situations and most of my things, including all my wonderful kitchen gadgets which I adore, are in storage. But I’m feeling like this needs to change because I just can’t take it anymore. I like to cook. I like to eat healthy. And when you’re tracking your calories and you give in to a lunch that’s not your smartest choice and you’re well aware of it, you punish yourself by not really eating dinner.
But, I have recently started reading the articles on hellogiggles.com (it has been around for quite some time, but I never paid it much mind before Bethany Joy Lenz became a regular contributor and I started watching New Girl with Zooey Deschanel, who is one of the site’s founders) and an article about ways to save money popped up. The article referenced a blog called Packable Feast, and while I wasn’t overly impressed with the blogger’s lunch choices, I did fall crazy for the lunch box she is using to pack the items in.
The website is www.laptoplunches.com and I will definitely be investing in the Urban Swing Lunch Kit (I’ll post a picture in a minute). What a great way to encourage yourself to eat from all the food groups and add more fruit and veggies to your day! I’m very excited about this discovery and wanted to share for any of you who might be like me and grab leftover pizza for lunch or swing by Subway or Panera Bread week after week. And coincidentally, I’ll be hitting the grocery store tonight after work to make some delicious and healthy for my boyfriend! Fantastic Friday. Enjoy the weekend everyone!
